not too bad calorie wise when compared with traditional decor. icing. It's fluffy and light for summer cakes.

Recipe Ingredients for seven minute icing ( portioned for 3 dozen cupcakes)

2 large egg whites
1 1/2 cups granulated sugar
1/3 cup cold water
1/4 tsp cream of tartar
1 tsp. vanilla extract

Recipe Directions for seven minute icing ( portioned for 3 dozen cupcakes)

Start water in a double boiler. In top part of boiler mix all ingredients except vanilla with hand mixer for 30 second. Then when water is boiling, with hand mixer on high mix for 7 minutes. Then remove from heat, add vanilla and mixing for a minute more until vanilla is incorperated. done.
