Recipe Ingredients for Sesame Scallops

1 lb sea scallops
1 tablespoon minced garlic
1 tablespoon minced ginger
2 teaspoons orange zest
1 teaspoon lime zest
2 tablespoons fresh orange juice
4 tablespoons olive oil
2 teaspoons toasted sesame oil
1/2 teaspoon Spices Crushed Red Peppers
4 tablespoons sesame seeds
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 Nonstick cooking spray

Recipe Directions for Sesame Scallops

  1. In a small bowl, whisk together garlic, ginger, zest, oil, juice, and chili flake. Pour over the scallops. Marinate for 15-20 minutes.

  2. Combine sesame seeds, salt, and pepper in a shallow dish.

  3. Remove from marinade and coat in sesame seed mixture.

  4. Coat a nonstick pan with cooking spray and heat over medium high heat. Cook the scallops 2 minutes per side, until flesh is opaque and sesame seeds are golden brown. Do not get the temperature too high or the sesame seeds will burn.
