Sesame Roast Vegetables Recipe

An easy roast vege recipe, you can use any vege you want! If you want to use soft vege like zucchinis or eggplant you might want to add them later than the potatoes, depending on your tastes.

Recipe Ingredients for Sesame roast vegetables

6 potatoes, medium chopped into thirds
3 carrots, chopped into big chunks
2 cups yam or sweet potato, chopped into chunks
2 red onions, cut into quarters
6 cloves garlic, whole
2 cups pumpkin, cut into chunks
2 tbsn olive oil
2 tbsn sesame seeds
2 tbsn honey
1 pinch of salt
1 pinch of pepper

Recipe Directions for Sesame roast vegetables

  1. Cut your veg

  2. Parboil the hard veg - potatoes, sweet potatoes, carrots, and pumpkin

  3. Sieve veg and let dry and cool

  4. Put all vege including whole cloves of garlic (or even a whole head if you want) and the red onion into a large roasting pan.

  5. Drizzle with the oil, and toss

  6. Cook in the oven on a medium heat (about 180) for 30 mins, turning every so often.

  7. When they are soft and nearly done, drizzle the honey over them and pour on the sesame seeds and toss. Cook for a further 10 minutes.

  8. Season to taste.

  9. (sorry for my vague cooking directions, I'm a zen cook and just test to see when they're ready!)
