Recipe Ingredients for Sesame Pancakes

1 cup sesame seeds
1 cup old fashioned oats
3 cups whole wheat flour
2 3/4 cups all purpose flour
1 1/2 cups buckwheat flour
2 1/4 cups yellow corn meal
1 cup sugar
12 ounces buttermilk powder
5 tbsp baking powder
2 tbsp baking soda
2 tablespoons salt
20 eggs
40 tsp vegetable oil

Recipe Directions for Sesame Pancakes

  1. Toast sesame seeds in cast iron skillet, med--hi heat, stirring occasionally until fragrant about 4 minutes. pour in bowl, cool.

  2. Pulse oats in food processor until powdery, add cooled sesame seeds and pulse to grind - some bits remain, do not over do.

  3. Transfer to very large bowl add flours, cornmeal (stone ground preferred), sugar and buttermilk. stir well.

  4. sift baking powder, baking soda and salt over mixture, stir well.

  5. Transfer to 1 pint jars or ziplock bags, store in freezer to prevent rancidity from sesame seeds and flours.

  6. To prepare pancakes, beat eggs and water in medium bowl. whisk in 2 cups mix and veg. oil. Do not overbeat. Cook in heavy non-stick, oiled skillet over medium heat.
