Recipe Ingredients for Sesame lemongrass pork with peanut salad

6 garlic cloves, crushed
1 tbs finely grated fresh ginger
2 tbs lemongrass powder
2 tbs coriander seeds
100 ml skim evaporated milk
1 tablespoons fish sauce
3 tsp sesame oil
560 g pork chops
1/2 cup roasted peanuts, coarsely chopped
1 wombok (Chinese cabbage), finely shredded
3 carrots, peeled, cut into matchsticks
3 cups lettuce
1 tbs lime juice
2 tsp brown sugar
1 tbs black sesame seeds
1 tbs sesame seeds, toasted

Recipe Directions for Sesame lemongrass pork with peanut salad

  1. Combine the garlic, ginger, lemongrass, coriander root, coconut milk, 2 tablespoonfuls of the fi sh sauce and 2 teaspoonfuls of sesame oil in a large glass or ceramic bowl. Add the pork and turn to coat. Cover with plastic wrap and place in the fridge for 4 hours to marinate.

  2. Preheat oven to 180C. Heat a large frying pan over high heat. Drain the pork from the marinade and add to the pan. Cook, turning occasionally, for 5 minutes or until brown all over. Transfer to an oven tray and roast in preheated oven for 10 minutes or until cooked to your liking. Remove from oven and cover with foil. Set aside for 10 minutes to rest.

  3. Meanwhile, combine the wombok, carrot, coriander, mint and peanuts in a large bowl. Whisk together the lime juice, sugar, remaining fish sauce and remaining sesame oil. Drizzle over the salad and gently toss to combine.

  4. Divide the salad among serving bowls. Thickly slice the pork and place on the salad. Sprinkle with black and white sesame seeds. Serve immediately with brown rice, if desired.
