A Wheat Berry Salad with an asian twist

Recipe Ingredients for Sesame-Ginger Wheat Berry Salad

1 cups water
1/2 cup wheat berries
1 cup canned black beans, rinsed and drained
1 mango
3/4 cup carrot
1/4 cup mango chutney
2 tbsp. rice vinegar
2 tsp. toasted sesame oil
1/4 tsp. ground ginger

Recipe Directions for Sesame-Ginger Wheat Berry Salad

  1. In saucepan combine water and wheat berries. Bring to boiling; reduce heat.

  2. Simmer, covered, for 45 to 60 minutes or until tender.

  3. Drain liquid.

  4. Stir in black beans, mango, carrots, chutney, vinegar, oil, and ginger.

  5. Season with salt.

  6. Serve with napa cabbage. Makes 4 (2/3 cup) servings.
