Recipe Ingredients for Sesame Ginger Asian Chicken Salad

1 (large) chicken breast, cooked and diced
1/2 head romaine lettuce
1 cup celery, chopped
3/4 cup scallions, chopped
1 cup cauliflower, pieced
1 cup broccoli, pieced
2 cups chow mein noodles
1/2 cup almonds, slivered
1 cup grapes
21 ounce mandarin oranges, no sugar added
1 cup sesame ginger dressing

Recipe Directions for Sesame Ginger Asian Chicken Salad

  1. To prepare the chicken, you can bake, grill, saute or like I do, put on the George Forman! I season it with pepper and garlic salt. Then dice when cooked and set aside.

  2. While chicken is cooking, prepare and combine all ingredients except chow mein noodles and dressing in large bowl. Mix together and serve with 2 tbs. of the ginger sesame dressing (I use Newman's Own Lighten Up Low Fat Sesame Ginger Dressing) and some chow mein noodles on top.

  3. Dressing and Chow mein noodles can be mixed in if you're bringing a dish to pass or serving the salad all at once. Since this recipe is for 6 servings, adding the dressing and chow mein noodles then putting it back in the fridge for later or for the week will just make everything soggy.

  4. I got this recipe from my mom who has been battling with her weight my whole life. She's finally lost almost 80 lbs and this is her go to salad that she can easily pack or have prepared in the fridge. Congrats MOM!!
