Recipe Ingredients for Sesame Eggplant Parmesean

2 Eggplant, unpeeled
2 cups Low Sodium Marinara Sauce
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp rosemary
1/2 medium onion
1 clove garlic
5 oz Rainbow Salad
0.33 cup Sesame Seeds
7 oz Fat Free Mozzarella Cheese
1/4 cup parmesean cheese

Recipe Directions for Sesame Eggplant Parmesean

Cut eggplant into 1/2 inch slices and saute. Remove eggplant to casserole dish. Sprinkle about half the mozzarella on the eggplant. To saute pan, add spices, onion, sesame seeds and saute until onions are clear. Then add in the sauce and rainbow salad and simmer 15 minutes. Cover eggplant in casserole dish with sauce and add remainder of mozzarella cheese on top. Bake for about 20 minutes at 350. Sprinkle the parmesean cheese on top right after the dish comes out of the oven.
