Recipe Ingredients for Sesame Carrot Stir-Fry

1 tsp sesame oil (Asian, the dark one)
4 large carrots, sliced on the diagonal
1 onion chopped
2 tsp ginger, grated
2 T soy sauce, reduced sodium
1 T sesame seeds
1/2 c scallions (optional)

Recipe Directions for Sesame Carrot Stir-Fry

  1. Heat oil in frying pan or wok till it sizzles. Add carrots and onion. Stir-fry about 4-5 min until the carrots are crisp-tender, add the ginger and continue to cook just until fragrant, only about 15 seconds. Add the soy sauce and stir until everything is coated, about 10-15 seconds.

  2. Remove from heat and stir in sesame seeds. Sprinkle w/scallions right before serving (if you are using them).
