Heart Smart sesame beef and rice salad

Recipe Ingredients for Sesame Beef & Rice Salad

3 oz beef sirloin
2 cups spinach, fresh
1 clove garlic
1/2 tsp onion powder
4 cherry tomatoes
1 tsp sesame oil
1/2 tbsp sesame seeds
1 cup brown rice

Recipe Directions for Sesame Beef & Rice Salad

  1. Prepare rice according to directions, omit salt.

  2. Rinse and dry spinach. Rinse and halve cherry tomatoes. Mince garlic.

  3. Slice beef into inch-wide strips.

  4. Heat sesame oil in nonstick skillet over medium heat and saute beef and garlic for about 5 - 6 minutes, or until beef is no longer pink.

  5. Add sesame seeds and onion powder, cook one minute more.

  6. Let cool slightly and combine with rice, cherry tomatoes and low/non-fat salad dressing of your choice in a large bowl.

  7. Serve over fresh spinach.
