Recipe Ingredients for Serendipity Chocolate Blackout Cake

3 cups cake flour
1 3/4 teaspoons baking soda
1 pound unsalted butter
2 pounds light brown sugar
7 large eggs
2 teaspoons vanilla extract
2 1/2 cups cold water
1 cup sour cream
1 pound unsweetened chocolate
1 pound unsweetened chocolate
2 cups cream
2 1/2 cups sugar
1 1/2 tablespoons light corn syrup
1 tablespoon vanilla extract
2 cups sour cream
3/4 cup chocolate chips

Recipe Directions for Serendipity Chocolate Blackout Cake

  1. preheat oven to 325 degrees. Butter the bottoms of four 9 inch round pans and line with parchment paper

  2. sift togeher the flour and baking soda in medium bowl.

  3. In a large bowl, cream the butter and sugar. add the eggs and vanilla and mix thoroughly. Add the dry ingredients in three parts, alternating with the cold water. Mix completely. Add the sour cream and melted chocolate and mix unitl incorporated

  4. Divide the batter evenly among the prepared pans. Bake for 30-40 minutes, until the cakes have puffed and pulled away from the sides of the pans. Cool the cakes in their pans on a rack for 15 minutes. the cakes will sing to half their height - don't worry, that's normal. Remove them from their pans and cool completely on racks

  5. To make the icing, place the chopped chocolate in a large mixing bowl. Heat the cream, sugar, and corn syrup ina medium saucepan just to boiling. Pour over the chopped chocolate, then slowly stir until smoth. add the vanilla and allow to cool completely; then beat in the sour cream. The icing should be glossy.

  6. To assemble your cake, place on cake layer on a plate. top it with 1/2 cup of the icing and 1/4 cup of the chocolate chips. Repeat with next two layers. Top the cake with the final layer and cover the entire cake with remaining icing. Store covered at room temperature. Garnish with fresh berries if you like. Any leftover slices can be used to make a Forbidden Broadway Sundae.
