Spicy Peanut & Tomato Based Stew

Recipe Ingredients for Senegalese Peanut Stew

8 oz. peanut butter
10 oz canned crushed tomatoes, basil
1 plum tomatoes
3 cups water
1 peppers, jalapeno
2 carrots
1 medium onion
2 tbsp fresh ginger
2 garlic cloves
1 lb chicken thighs
1 tbsp olive oil
1 tspn salt
1/2 tspn pepper
1 tbsp curry powder

Recipe Directions for Senegalese Peanut Stew

  1. Dice onions, garlic, jalapenos and ginger. Remove seeds from jalapenos.

  2. Peel and cut sweetpotatoes and carrots into 2 inch pieces. Cut cabbage into eighths.

  3. Pour olive oil in large pot over medium heat. Add onions, garlic, peppers and ginger. Cook for 3 minutes. Add curry powder.

  4. Boil chicken in separate pot for 15 minutes. Use broth from chicken or water. Place chicken aside.

  5. Add tomatoes and water or homemade chicken broth. Whisk in peanut butter. Bring to a boil.

  6. Add sweetpotatoes, carrots, cabbage and chicken. Let cook over low heat for 45 minutes.

  7. Serve over jasmine rice.
