Recipe Ingredients for Senegalese Chicken & Vegetable Curry

10 oz Fresh Boneless Skinless Chicken Breasts
2 1tsp Olive Oil
1 oz Peppers
1 medium Carrots
3 cup (1" cubes) Eggplant
4 cup Cauliflower
1 potato medium (2-1/4" to 3-1/4" dia) Potatoes, White, Flesh And Skin
2 cup Tomato Products
1 tbsp Curry Powder
0.25 tablespoon Thyme
1/4 tsp Cayenne
1 dash Salt, Table
1 tbsp Vinegar, Cider

Recipe Directions for Senegalese Chicken & Vegetable Curry

Brown chicken in oil. Add salt and pepper. Remove from the pan. Add onions to the same pot along with the bell pepper. Saute for 5 minutes. Add the remaining vegetables, curry powder, thyme, cayenne, and salt. Simmer for 10 minutes. Return chicken to the pan. Add tomato sauce. Bring to a simmer and cook for 30 minutes. Add vinegar, stir well and serve over rice or couscous.
