From an old family recipe, that I got from a friend.

Recipe Ingredients for Senegalese Chicken Soup

1 1/2 tablespoons unsalted butter
2 granny smith apples
2 stalks celery
100 gram onion
3 medium carrots
40 gram curry powder
1 teaspoon turmeric
1 teaspoon coriander
1/4 teaspoon cayenne pepper
3 tablespoons all purpose flour
6 oz fat-free half and half
200 gram Slow Roasted Turkey Breast
28 oz 99% fat-free chicken broth
45 gram Lentils
4 cups water
30 gram pasta

Recipe Directions for Senegalese Chicken Soup

  1. Peel, core and dice apples. Dice celery. Dice carrot and onion.

  2. Saute in the butter until vegetables are soft. Add the spices and stir-fry for 10 minutes.

  3. Add the all-purpose flour, stir-fry for 5 minutes.

  4. Add the chicken broth and water. Cook over medium heat, covered, for approximately 10 minutes, stirring occasionally.

  5. Add the pasta and cook for another 10 minutes, or until pasta is at dente.

  6. Last, stir in the half & half along with the diced Turkey breast meat , heat for another few minutes and serve.
