Semolina is an Italian pasta flour.

Recipe Ingredients for Semolina and spinach Gratin

2 cups milk
2 cups water
2 tablespoons unsalted butter
1 1/4 teaspoons salt
1 cup semolina flour (pasta flour)
10 ounce frozen chopped spinach, thawed, squeezed dry
1/2 cup grated Parmesan cheese
3 large egg whites
1/4 teaspoon ground nutmeg
1 Salt and pepper
1/3 cup grated Parmesan cheese ( for top)

Recipe Directions for Semolina and spinach Gratin

  1. Preheat oven to 400 degrees. Spray 11x7 inch glass baking dish with cooking spray. Bring to boil in large sauce pan milk, water, butter, and salt.

  2. Reduce heat to medium. Gradually whisk in semolina, then whisk until smooth, about 5 minutes.

  3. Whisk in the spinach, 1/2 c. grated parm., eggs, and nutmeg, and salt and pepper to taste.

  4. Pour mixture into baking dish;smoth top and sprinkle with the rest of the parmesan cheese.

  5. Bake gratin until puffed and golden; about 40 minutes. Cool before serving.

  6. *Original recipe called for whole milk and regular eggs. Was reduced to save on fat content and calories.
