Recipe Ingredients for Selena's Spring Minestrone

2 cloves garlic
1 medium yellow onion
2 tbs Olive oil
3/4 cup asparagus
1 1/2 cup green beans
1 cup peas
2 cans chicken broth
1/2 cup fat free half and half
1/2 tsp marjoram
1/2 tsp fresh basil
1/4 cups Italian parsley
1/2 tsp Salt
1 tsp Pepper
1 cup celery

Recipe Directions for Selena's Spring Minestrone

  1. Place olive oil in stock pot add onion, garlic, Marjoram, basil, salt and pepper let sweat for three to four minutes medium heat.

  2. Cut other veggies in uniform size and add to the stock pot. Simmer while stirring 5 to 7 minutes. Add broth, 1 bay leaf and Half and half bring just to soft boil, reduce heat and simmer 20 minutes. REMOVE BAY LEAF

  3. Scoop out 1.5 cups of soup with veggies into blender and puree till smooth, add parsley and puree again add mixture to soup and simmer 5 more minutes while stirring and serve hot. You may want to add salt and pepper at this stage to taste rather than at the beginning.

  4. I like it better at the beginning.
