Recipe Ingredients for Seitan (with tomato paste)

2 cups Vital Wheat Gluten
1 cup vegetable broth
1/8 cup soy sauce
2 tbsp tomato paste
1/8 cup ground almonds
1 tsp garlic powder
1 tsp onion powder
1 tbsp olive oil
1 salt and pepper

Recipe Directions for Seitan (with tomato paste)

  1. Mix together well in a large bowl the vital wheat gluten, ground almonds, garlic powder, onion powder, salt and pepper.

  2. In a separate bowl, mix together vegetable broth, soy sauce, tomato paste and olive oil. Blend until smooth.

  3. Make a well in the dry ingredients. Pour in the liquid mixture. Blend with hands until a sticky ball forms. Add more vital wheat gluten if needed.

  4. Kneed for 2 minutes. Let rest for 10 minutes.

  5. While the gluten mixture rests, mix together in a large pot 5 cups each of vegetable broth and water, 1 cup soy sauce and 1 TBSP lemon juice..

  6. Cut the gluten mixture into 3 pieces. This will take a bit of doing. Place the 3 pieces of gluten in the brine mix.

  7. Bring the brine to a boil. Once the brine is boiling, reduce heat to med-low, and take lid half off. Simmer for 1 hour. Turn off the heat and let cool on the stove for another 30 minutes.

  8. Store in the boiling liquid in the fridge for up to 2 weeks.
