this is the "steamed red seitan" from the vegan latino cookbook. (so of course it's a good beef substitute for any latino meal).

Recipe Ingredients for Seitan Rojo

1 1/2 cups vegetable broth
2 tbsp garlic, minced
3 tbsp soy sauce
4 tbsp tomato paste
2 tbsp olive oil
1 1/2 cup vital wheat gluten
1/2 cup chickpea flour
1/4 cup nutritional yeast
1 tsp oregano
1/2 tsp cumin

Recipe Directions for Seitan Rojo

  1. In a large bowl mix dry ingredients. Make a little well in the middle of the mixture.

  2. In a separate bowl whisk the wet ingredients. Pour the wet mixture into the well created within the dry mix.

  3. stir with a rubber spatula until dough does not stick to sides. Knead for 3 mins, let dough rest for 10 mins, knead for 1/2 a min.

  4. Cut dough into 4 loaves (each one will serve 2 people). Wrap tightly with foil and steam for 30 mins. Remove and cool in fridge over night before use.
