Recipe Ingredients for Seitan & Red Pepper Fajitas with Avocado-Yogurt Sauce

8 oz Seitan Traditional
2 1tsp Olive Oil
2 medium (2-1/2" dia) Onions
2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
0.75 cup (8 fl oz) Soup, Chicken Broth
0.75 tsp Oregano

1 cup, cubes Avocados
1 pepper Peppers, Jalapeno
2 1/2 cups Hearts of Romaine
3 serving Salsa
4 oz Cilantro
2 clove Garlic
0.5 fruit (2" dia) Limes

Recipe Directions for Seitan & Red Pepper Fajitas with Avocado-Yogurt Sauce

  1. Heat oil on medium. Saute seitan about 6 minutes. You might want to cut it into smaller 1-inch pieces. Add the onions, sliced thinly. Add the garlic, minced. Cut the peppers into 1-inch squares and add that next. Add the oregano and broth and simmer until broth is evaporated and the peppers are soft.

  2. While that's simmering, blend together the avocado, yogurt, cilantro, jalapeno (seeds removed), and the juice of 1/2 a lime. Add salt as desired.

  3. Serve in tortillas (or not if you want this lower-carb - tortillas are not included in the ingredients for that reason) with chopped Romaine lettuce and salsa.
