A vegetarian version of the sub favorite. Add your own seitan; I make my own chicken flavored for this.

Recipe Ingredients for Seitan Parmesan Hoagies

1 tbsp extra virgin olive oil
1/2 cup cornmeal
1/8 tsp garlic powder
1/8 tsp chili powder
1/8 tsp cayenne
1/8 tsp black pepper
1 small onion
1 can mushrooms
1 can tomato paste
1/4 tsp rosemary, dried
1/4 tsp thyme, dried
1 tsp basil, dried
4 buns hoagie rolls
4 slice 2% American cheese slices
1 tbsp light mayo

Recipe Directions for Seitan Parmesan Hoagies

  1. Cut 12 oz seitan into desired shapes; small slices work best.

  2. Heat EVOO on medium high heat.

  3. Mix cornmeal, chili, cayenne, garlic and pepper together.

  4. Dredge seitan in cornmeal and place in pan, flipping when brown.

  5. Remove when both sides are fried.

  6. Slice onion. Add to pan and cook on medium low heat until soft.

  7. Drain mushrooms and reserve liquid. Add mushrooms to pan.

  8. In small bowl, mix tomato paste, remaining spices, and mushroom liquid. Add a little more water if needed to make a sauce.

  9. Add to mushrooms and onions.

  10. Simmer on low.

  11. Meanwhile, slice hoagies and toast in oven on 200 degress F.

  12. Remove from oven. Place cheese slice on roll and 1/4 of the seitan on each.

  13. Toast bottoms of roll with seitan and cheese until cheese melts.

  14. Lightly spread mayo on top of roll.

  15. Pour sauce over seitan and top with roll.
