The flavors of traditional chicken paprikas bundled for veg*ns. From Vegan Lunchbox Around the World by Jennifer McCann.

Recipe Ingredients for Seitan Paprikas

2 tbsp vegetable oil
1 lb chicken-style seitan, drained (reserve broth)
1 medium green Bell pepper, chopped
1 medium tomato, skinned and diced
1 tbsp paprika
1 salt and black pepper to taste

Recipe Directions for Seitan Paprikas

  1. Heat the oil in a nonstick skillet over medium heat. Saute onions until soft, about 8 minutes.

  2. Add seitan, green peppers, tomato,paprika, and 1/2 cup water OR 1/2 cup seitan broth. Bring to a boil then reduce heat to a simmer. Cook covered for 15 minutes.

  3. Season with salt and pepper. Serve with veg*n sour cream if desired.
