Recipe Ingredients for Seco, Peruvian Beef Stew

1 lb beef, cubed
8 oz beer, dark
2 T garlic
1 c cilantro, chopped
4 T lime juice
1 c onion, diced
12 oz beef broth
1/2 c peas
1 c water
2 T tomato paste
2 cups rice, cooked
2 T oil

Recipe Directions for Seco, Peruvian Beef Stew

  1. Prepare rice

  2. Brown beef in oil, add onions till clear. Stir in garlic. Saute briefly until garlic is integrated throughout.

  3. Add Cilantro, beer, broth, water, tomato paste, lime juice. Cover and stew until beef is tender.

  4. I use a pressure cooker. This can be finished in about 10 minutes in a pressure cooker or it could take as long as you like to stew--an hour? hour and a half? depending on the cut of meat.

  5. Add peas toward the end of the cooking time.

  6. Serve in bowls over cooked rice.
