Recipe Ingredients for Seb's Lemon meringue pie

3 tablespoons of corn starch
300 grams of lemons, juice and skin
175 grams of sugar
2 eggs
300 grams of water
1 1/4 cup of graham crackers
25 grams of margarine

Recipe Directions for Seb's Lemon meringue pie

  1. Make a graham cracker crust : in a pie dish add 1 1/4 cups of graham crumbles (if you can't find crumbles crush whole graham cookies to a powder) to 1/4 cup of magarine and mix in slowly while pushing it down and to the sides with your hands. Put in the refrigirator for a hour, hour and a half.

  2. Put the corn starch in a bowl, cover it with water and add the rest of the water to a saucepan

  3. In the saucepan, put the peel and the juice of two fresh lemons, you can add a little lemon juice if you have some.

  4. Add the corn starch and water mix into the pan and bring a boil while constantly whisking.

  5. Cook for 2 minutes, DO NOT STOP WHISKING

  6. Let cool for a little, until warm but not boiling hot. Seperate the egg yolks from the white, and reserve the whites, add the yolks and 5 tablespoons of sugar to the mix, whisk until smooth. Put the contents in the graham cracker crust made before.

  7. Using an electric mixer, whisk the whites until they are foamy and have double in volume.

  8. Gradually add in the sugar while mixing until you obtain a smooth, hard meringue.

  9. Add the meringue on top of the pie.

  10. Put on broil in the oven, just until the meringue gets a little brown, about a minute or two. Watch it closely or it will burn!

  11. Put in the refrigerator for a few hours, eat it when it's nice and cold.
