Adapted from Alabama Breakfast Pie http://www.mrbreakfast.com/superdisplay.asp?recipeid=1028. We actually use the pizza cheese from the UnCheese cookbook, but it doesn't seem that we can add a recipe to a recipe, so the calories listed on this are probably higher than they are in reality (this assumes Follow Your Heart Monterey Jack)

Recipe Ingredients for Seattle Breakfast Pie

3 eggs
1/2 cup soy milk
1/2 teaspoon salt
1/4 tsp pepper
1 tsp vegan Worcestershire
1/8 tsp liquid smoke
4 medium potatoes
3 tbsp olive oil
6 oz vegan cheese
1/2 cup finely chopped onion
1 medium red pepper, chopped
1/4 cup diced pimento

Recipe Directions for Seattle Breakfast Pie

  1. Preheat oven to 425 degrees F.

  2. Mix together the first 6 ingredients in a medium bowl.

  3. Shred potatoes. Press potatoes into bottom and up the sides on an ungreased 9 inch pie plate drizzled with olive oil.

  4. Bake this crust for 25 mins or until lightly browned - cool on wire rack.

  5. Reduce oven heat to 375.

  6. In crust, layer from bottom up: Onion, Peppers, Pimento, Cheese.

  7. Cover with egg/milk mixture. Bake at for 35-40 mins or until set. Let stand for 10 minutes before serving.
