Frozen veggies, brown rice and chicken

Recipe Ingredients for Seasoned California Veggies Rice Pilaf

2 tbsp olive oil
0.82 kg chicken, boneless, skinless
2 tbsp Italian seasoning
500 g frozen vegetables, california medley
1 cup mushrooms, sliced
10 cherry tomatoes, sliced
2 cups chicken broth
1 cup brown rice
2 tbsp parmesan cheese

Recipe Directions for Seasoned California Veggies Rice Pilaf

  1. Cook chicken in cooking spray and sprinkle Italian seasoning on top, to taste.

  2. Cook brown rice separately by sauteeing in 2 tbsp olive oil and then adding 2 cups chicken broth and simmer for 40 minutes.

  3. Cook vegetables separately and add more chicken broth, if desired, for flavor. Or you can add salt.

  4. Stir rice, chicken and veggies together and serve. Sprinkle parmesan cheese on top if desired.
