Recipe Ingredients for Seared Scallops with Lime and Cilantro butter

2 tbs olive oil
1 pound sea scallops
4 tbls lime juice
1 tbls unsalted butter
1 cup cilantro
2 cloves garlic

Recipe Directions for Seared Scallops with Lime and Cilantro butter

  1. Season scallops with salt and fresh paper on a plate.

  2. Put an empty glass casserole dish into oven at 200 F.

  3. In large pan, heat one tablespoon olive oil and let pan get hot.

  4. Add eight scallops, with good room between each. Cook for about 2.5-3 minutes per side until golden brown.

  5. Put the first batch in the oven to keep warm and then do the second batch.

  6. After all scallops are in the oven, add butter and melt.

  7. Add lime juice and cilantro and let simmer for 30 seconds.

  8. Return scallops to pan, and toss until they are coated.
