Recipe Ingredients for seared scallops with beans

1 lb scallops
21 oz white beans
4 cups baby spinach
1 clove garlic
1 strips bacon
1/2 red onion
1 tbsp butter

Recipe Directions for seared scallops with beans

  1. Heat a medium saucepan on low and cook bacon until it begins to crisp Pour off some of the bacon fat and add onion and garlic

  2. Saute them until onion is soft about 2 to 3 minutes

  3. Add white beans and spinach and cook until beans are hot and spinach is wilted keep warm

  4. heat large cast iron pan on high blot scallops dry with paper towel and season on both sides

  5. add butter to pan and after it melts add scallops Sear them 2 to 3 minutes on each side until deeply caramelized.

  6. before serving add lemon juice to beans and season divide beans into four warm bowls and top with scallops
