Recipe Ingredients for Seared Salmon With Creamy Leek Sauce

3 tbsp salted butter
6 cups leeks,about 3 medium sized ones, dark green leaves and roots removed, sliced into 1/2" rounds, rinsed to remove grit
1 cup celery, diced
3/4 cup chicken stock
1/2 cup cream
2 tbsp olive oil
24 oz salmon fillets, 1" thick
1 salt and pepper

Recipe Directions for Seared Salmon With Creamy Leek Sauce

  1. Melt butter in a medium skillet set over medium-low heat. Add leeks and celery; simmer, stirring occasionally, 5 minutes. Add 1/2 cup chicken stock, and simmer until leeks are very tender, about 3-4 minutes. Add cream and return to simmer. Season with salt and pepper. Reserve half; transfer remaining mixture to jar of blender. Add remaining chicken broth and puree until leek sauce is smooth.

  2. Meanwhile, heat oil in a large sauté pan over medium heat. Season fillets with salt and pepper; place skin side down in pan. Cook until skin side is well browned, about 5 minutes. Turn over, and sauté just until fish is cooked through, 3 to 4 minutes more; fish should be slightly pink in the center. Transfer to a platter. Serve with leek sauce. Garnish with reserved leek mixture.
