Seared Halibut w/ Herbed Tomato Sauce

Recipe Ingredients for Seared Halibut w/ Herbed Tomato Sauce

24 oz halibut fillets
1/4 t pepper
2 t olive oil, extra virgin
1/2 medium onion, chopped
2 cloves garlic, minced
1 T capers
1/4 t basil
1/4 t oregano
14 1/2 oz tomatoes, diced

Recipe Directions for Seared Halibut w/ Herbed Tomato Sauce

  1. Pat dry the fish and season to taste.

  2. Cook fish in hot oil 3-4 minutes on each side.

  3. Transfer fish to a serving platter and keep warm

  4. Add onion and garlic to skillet and saute for 2 minutes.

  5. Stir in capers, basil, oregano; cook 1 minute.

  6. Reduce heat to low; add tomatoes and cook, stirring occasionally, 10 minutes.

  7. Top fish with tomato sauce.
