Recipe Ingredients for Seared-chicken salad with almonds and dried cranberries

1 1/2 tbsp olive oil
1/2 pound chicken breast
1 1/2 tbsp balsamic vinegar
1/2 tbsp apricot jam
1/2 tbsp dijon mustard
3 ounces baby arugula
3 ounces endives
1/4 cup dried cranberries
1/4 cup sliced almonds

Recipe Directions for Seared-chicken salad with almonds and dried cranberries

  1. In a large skillet, heat 1/2 tbsp oil over high, season chicken with salt and pepper and cook until opaque throughout, 1 to 2 minutes per side. Slice crosswise.

  2. In a small bown, whisk together vinegar, jam, mustard and 1 tbsp olive oil. Season with salt and pepper.

  3. In a large bowl, toss arugula and radicchio or endives with most of the dressing. Divide salad among two plates, arrange chicken cherries (or cranberries) and almonds on top. Drizzle with remaining dressing and serve.
