Sean's Halibut Chowder Recipe

A Manhattan style fish chowder. You can make this with any fish similar to halibut such as sturgeon or flounder.

Recipe Ingredients for Sean's Halibut Chowder

1 tbsp extra virgin olive oil
2 yellow pepper
1 red pepper
1/2 sweet onion
750 ml white wine
84 oz canned diced tomatos
16 oz halibut

Recipe Directions for Sean's Halibut Chowder

  1. Dice the peppers and onion into about 1" squares

  2. Add the olive oil to a large stockpot on medium high heat. Saute the peppers and onion until the onions are translucent.

  3. Add the white wine and reduce by about half.

  4. Add 3 28 oz cans of diced tomatos, juice and all. Fill each can halfway with cold water. Rinse and add to the soup.

  5. Bring the soup to a high heat. Add the thyme and bay leaf. Allow to simmer for at least 3 hours, 5 is better.

  6. Take the Halibut remove any skin if necessary. Drop the entire piece into the soup. The heat of the soup will poach the fish in about 10~15 minutes. Stir to break up the fish.

  7. Serve with fresh ground pepper and a little tabasco sauce. Enjoy.
