A Chicago style pizza. You will need a well seasoned 12" cast iron skillet to pull this off.

Recipe Ingredients for Sean's Deep Dish Italian Sausage and Mushroom Pizza

1 cup warm water
1 tsp Olive oil
1/2 tsp yeast
2 1/2 cups unbleached flour
2 cups shredded mozzarella cheese
1 lb italian sausage
1/2 lb mushrooms, sliced
2 cups pasta sauce

Recipe Directions for Sean's Deep Dish Italian Sausage and Mushroom Pizza

  1. Take 1 cup of warm (90 degree) water add the oil and yeast. Stir together vigorously. Let sit for about 10 minutes.

  2. In a large mixing bowl add 1 1/2 cups of flour. Add the liquid and mix together. I use a big flat wooden spoon. Add flour until the mixture stops being sticky. You may use more than 2 cups.

  3. Let the dough rest and rise in a dry place until it doubles in size.

  4. Cook the sausage and set to the side on paper towels to drain.

  5. Once the dough has finished rising. Remove it from the bowl and shape it into a ball. Roll it out until it is about 15" in diameter.

  6. Place the dough in the skillet. Press the dough up against the sides of the pan until the level of the dough is at the level of the pan.

  7. Spread about 1/2 cup of the cheese evenly accross the bottom of the dough. Place in a preheated 425 degree oven and cook for about 8~10 minutes.

  8. Remove from oven. Add the sausage and mushrooms. Pour the sauce over the top. Spread the rest of the cheese over the top of the sauce.

  9. Place the finished pizza back into the oven and cook for 25~30 minutes until the cheese is golden brown and bubbly.

  10. Remove from the oven and let rest for 5 minutes before slicing.

  11. Enjoy!
