Sean's Chile Verde Recipe

A classic Chile Verde. I top it with a spoon of sour cream.

Recipe Ingredients for Sean's Chile Verde

3 lbs pork butt
2 tsp olive oil
1 medium sweet onion, diced
6 cloves garlic, diced
1 1/2 lbs fresh tomatillos, husks removed
4 poblano peppers
6 jalepeno peppers
1 cup cilantro
1/8 cup fresh lime juice
2 tsp cumin
2 tsp pepper
6 cups chicken stock

Recipe Directions for Sean's Chile Verde

  1. Cube the pork butt into 1" cubes.

  2. In a heavy bottom pot use heat the oil and sear the cubed pork. You don't want to cook it through, just sear the outside.

  3. Remove the pork from the pot and cook the onion and garlic until the onion is translucent

  4. Add the pork back to the pot and then add the chicken stock.

  5. Take a pot large enough to hold the peppers and tomatillos, fill it 1/3 full with water and heat to a boil

  6. Cut out the seed pods from the peppers and cut them into large cubes

  7. When the water is boiling add the peppers and tomatillos. Remove when the tomatillos just begin to soften.

  8. Drain, reserving a cup or two of the water, and put the tomatillos and peppers into a blender. Blend until smooth. You may need to add some of the reserved water to get them to blend down.

  9. Add the tomatillo mixture to the pork. Simmer for 3-5 hours over low heat until the mixture is thick.

  10. ****During the simmering process, the pork will release a lot of fat. I just skim it off as I'm going along. The dish will reduce by about half.
