Yummy. You can use any kind of white fish, scallops, muscles, etc. Substitute turkey chorizo for bacon if you like. Add fresh tomatoes, or any other kind of vegetable you like.

Recipe Ingredients for SEAFOOD STEW

1 can clams, with broth
1 lb large shrimp, peeled and deveined
1 4/5 lb cod
1 tbsp extra virgin olive oil
4 cloves garlic, minced
1/2 onion, chopped
1 celery stalk, chopped
2 slices turkey bacon, cooked crisp and crumbled
1 red pepper, diced
3/4 cup chicken broth, sodium reduced
1/4 cup water
1/2 lb turkey breast
1/2 cup fresh parsley, finely chopped
1 fresh pepper to taste

Recipe Directions for SEAFOOD STEW

  1. Heat oil in non-stick pan

  2. Fry onions, celery, and garlic till soft.

  3. Add turkey breast and brown.

  4. Add all ingredients except for seafood.

  5. Simmer for 30 minutes, stirring occasionally.

  6. Add fish, cover and simmer 10 minutes,

  7. Add shrimp, cover and simmer 5 minutes.

  8. Add clams, and simmer till heated through...about 4 minutes.

  9. Serve as a soup or over steamed brown rice.
