Shrimp and scallops with sun-dried tomatoes, onion, zucchini, and mushrooms in a light garlic-wine sauce. Great taste with about 280 calories per serving!

Recipe Ingredients for Seafood Scampi (Sort of)

6 1/2 oz wheat pasta, cooked per package directions (omitting salt)
1 tbl extra virgin olive oil, garlic flavored
1/8 cup onion, chopped
1 tsp capers
2 oz mushrooms, sliced thin
1 oz sun dried tomatoes, sliced in small strips
1 tbl parsley
1/2 tsp garlic powder
1/2 tsp Old Bay Seasoning
2 oz frozen scallops, thawed & drained
5 1/2 oz zucchini (about 1" in diameter), sliced thin
2 tbl white cooking wine
1 tsp lemon juice
8 oz frozen shrimp, pre-cooked, thawed & drained

Recipe Directions for Seafood Scampi (Sort of)

  1. Cook wheat pasta according to package directions, omitting salt.

  2. In the meantime, warm oil in large skillet over high heat. Reduce heat to medium and add onion, capers, mushrooms, sun-dried tomatoes, parsley, garlic powder and Old Bay Seasoning. Cook until onions are tender, about 5 minutes.

  3. Add scallops and zucchini, stir well and cook until scallops are opaque, rather than translucent, about 10 minutes.

  4. Add cooking wine and lemon juice and shrimp, and stir until well-blended. Cook about 3 minutes.

  5. Add cooked, drained pasta, stir well, and cook additional 3 minutes.

  6. Serve (2 cups per person).
