Lovely dish for company. Can use any seafood.

Recipe Ingredients for Seafood Pot Pie

1/4 cup butter
1 cup chopped onion
1 cup minced celery
1 cup sliced mushrooms
2 T flour
2 T Sherry wine
1/2 cup grated parmesan
2 cups milk
1 pound shrimp
1 pound fresh scallops
8 ounces lump crab meat
2 cups baking mix
1/2 cup yellow cornmeal
1/2 cup shredded Cheddar
1 cup buttermilk

Recipe Directions for Seafood Pot Pie

  1. Saute onions, celery and mushrooms in butter for 6 to 8 minutes.

  2. Stir in flour and cook 2 minutes, stirring.

  3. Add sherry and cheese.

  4. Stir in milk and cook 5 minutes or until thicker

  5. Remove from heat and add seafood.

  6. Spool into 8 oven proof dishes.

  7. Top with Drop Buttermilk Biscuits:

  8. Combine 2 cups baking mix, 1/2 cup yellow cornmeal and 1/2 cup shredded Cheddar

  9. Stir in 1 cup buttermilk but do not overmix

  10. Spoon the mix evenly over dishes with seafood mix.

  11. Bake at 350 degrees about 20 minutes or until biscuits are golden
