Seafood Pasta in White-Wine Garlic Oil Sauce

Recipe Ingredients for Seafood Pasta

135 g sea scallops
10 large shrimp
3 oz squid, raw
1 cloves garlic, diced
2 cloves garlic, whole and partially crushed
1 oz bacon
2 tsp low-fat margarine
2 tsp olive oil
6 oz of linguine
1/4 cup white wine
1 tsp dried chili peppers
1 dash of salt and pepper

Recipe Directions for Seafood Pasta

  1. Cook pasta, drain, and set aside

  2. Cut scallops in half and season with salt and pepper on both sides; season shrimp with salt, pepper, and diced garlic; season squid with salt, pepper, and chilis

  3. hot pan and hot oil

  4. Add whole garlic to oil, infuse and then remove garlic cloves

  5. add scallops to pan, dropping away and in a circle running clockwise; cook for 1-1.5 minutes over high heat, and turn and cook no more than a minute. Remove and set aside

  6. Add shrimp to pan and cook until done on one side (2 minutes) and turn

  7. Add squid at this point

  8. When shrimp and squid are almost done (about 1.5-2 minutes) add scallops back in and immediately add in margarine, toss with seafood and remove seafood from pan, careful to retain juices in the pan

  9. Cook juices for no more than 1 minute then deglaze with white wine and partially reduce

  10. add pasta to the pan, cook for no more than 30 seconds and toss with sauce

  11. Plate pasta and add seafood on top.
