A simple gumbo recipe using seafood and okra

Recipe Ingredients for Seafood and Okra Gumbo

14 oz shrimp
1/2 lb halibut or other white fish
1 lb okra, cut
1/4 cup flour
1/5 cup canola oil
2 tbsp olive oil
1 medium vidalia onion
2 cloves garlic
1 large bell pepper
2 stalks celery
1 tbsp bay leaves (2 leaves)
28 oz Tomatoes, Crushed, Canned
3 cups vegetable broth
1 tbsp kosher salt
3 tbsp parsley
2 tbsp cajun seasoning (I like Dinosaur BBQ)
1 tsp file powder
4 cups cooked white rice

Recipe Directions for Seafood and Okra Gumbo

  1. In the stock pot, start the okra sauteing in the olive oil

  2. Finely dice the onion, pepper, and celery

  3. Mix the flour and the canola oil in a microwave safe measuring cup and put in the microwave for 2 minutes. After 2 minutes, mix well, then put in for another minute. Mix again and put in for another 30 seconds, then mix. This makes a roux for the gumbo and should be a deep caramel color and smell like popcorn.

  4. When most of the slime is gone from the okra, mix in the onion, pepper, and celery and continue sauteing.

  5. Salt and pepper the veggies as you saute, and add the garlic, half the cajun seasoning, and half the parsley

  6. When the onions are becoming clear, add the tomatoes and broth, then add the bay leaves and the rest of the herbs, file powder, etc.

  7. Stir and bring back to boil then let the gumbo simmer for 1-2 more hours

  8. Add the cut up fish and shrimp and let cook for another 15 minutes, then serve over cooked rice
