Use raw, peeled shrimp and canned clams, drained and rinsed to remove some of the salt. This is a nice change from tuna noodle casserole, and no canned soup is needed.

Recipe Ingredients for Seafood Noodle Casserole

2 cups egg noodles, cooked, drained
4 ounces clams, canned, minced
6 oz shrimp
2 tbs lemon juice
2 tbs butter, unsalted
2 tbs flour
1/2 cup onions, chopped
2 tbs peppers, jalapeno, minced
2 cups milk, warmed
4 tbs parsley, chopped
4 tbs bread crumbs

Recipe Directions for Seafood Noodle Casserole

  1. In a small bowl, clean and chop the shrimp

  2. Drain and rinse the clams

  3. Add the lemon juice and parsley and refrigerate for 1 hour.

  4. In a heavy bottom saucepan, melt the butter

  5. Add the onions and jalapenos and saute on low heat until the onions are translucent.

  6. Stir in the flour until there are no lumps and let cook on low heat for 1 to 2 minutes.

  7. Gradually stir in the warm milk and increase the heat slightly to bring it almost to a boil.

  8. Stir as it cooks until it thickens.

  9. Add the clams and shrimp and cook over low heat just until the shrimp turn pink

  10. Add the cooked, drained noodles right into the pan and stir until well mixed.

  11. Pour the mixture into a prepared casserole dish

  12. Top with bread crumbs

  13. Bake at 350 F for 30 minutes

  14. Remove from the oven and let sit for 15 minutes before serving.
