Makes 8 enchiladas (8-inch tortillas)

Recipe Ingredients for Seafood Enchilada

1 medium onion
4 oz neufchatel cheese
3/4 tsp cumin
16 oz imitation crab meat
16 tortillas
10 1/2 oz cream of mushroom soup
8 oz sour cream
8 oz 1% milk
5 tbsp jalapeno
4 oz mozzarella, shredded

Recipe Directions for Seafood Enchilada

  1. Chop & saute onions and jalepenos in 1 Tbsp water

  2. Mix softened cream cheese, crab, & cumin

  3. Fill each tortilla with 1/3 cup mixture

  4. Roll and place in 9x13 pan

  5. Mix soup, sour cream, & milk

  6. Pour over tortillas

  7. Bake for 40 min at 350 degrees

  8. Sprinkle cheese over top and broil
