Recipe Ingredients for Seafood and Chicken Pasta 'N Sauce

6 3/10 oz scallops
5 3/5 oz shrimp
255 grams whole wheat penne, cooked
1 tablespoon olive oil
1/3 cup red onion, chopped
2 tablespoons lime juice
10 ml garlic, pureed
1 tablespoon mustard
200 grams chicken, diced, cooked
2 cup chicken broth, low fat, low salt
2 cup mixed vegetables, diced
1/2 cup tomatoes, diced
1 sweet green pepper, diced
2/3 cup asparagus, chopped
1 teaspoon ginger, pureed

Recipe Directions for Seafood and Chicken Pasta 'N Sauce

  1. Precook pasta to "a la dente" stage. Drain. Set aside.

  2. Pre cut all vegetables.

  3. Put olive oil in frying pan. Preheat.

  4. Add "harder" vegetables first, followed by softer vegetables.

  5. Mix lime juice, mustard, chicken broth, garlic, and ginger together to form "sauce". Add to frying pan.

  6. Let veggies cook in sauce until starting to soften.

  7. Add scallops, shrimp and cooked chicken, followed by paste.

  8. Cover and let cook for a couple more minutes.
