Recipe Ingredients for Seafood Chanterelle Mushroom Chowder

2 tbsp light butter
16 oz Oysters
12 oz Shrimp, Mixed Species
8 oz Tilapia Fresh Seafood
16 oz Spinach
1 large Onion
12 oz Grouper, Mixed Species
16 oz 1% Partly Skimmed Milk
20 g Flour, All Purpose
20 oz chanterelle Mushrooms
6 oz Carrots, Baby
1 oz fresh dill
2 tbsp cayenne
2 scallions

Recipe Directions for Seafood Chanterelle Mushroom Chowder

Sautee onions, mushrooms, and broccoli in light butter. Add water if needed to keep moist. Add flour and mix well before slowly adding milk. Stir in remaining ingredients except seafood to cook through. Once cooked through, add heartiest seafood first (grouper cheeks, then tilapia), then finish with oysters. Also add dill and scallions after oysters. If desired, add gumbo file and fish sauce in the final few minutes of cooking.
