Sea Scallops with Asparagus Sauce Recipe

A nice, light seafood meal. Can be scaled down to 3 scallops per person as an appetizer.

Recipe Ingredients for Sea Scallops with Asparagus Sauce

10 scallops, sea
1 pinch salt
1 lb asparagus
1/2 c chicken broth, fat free
2 tbs butter
2 tbs olive oil

Recipe Directions for Sea Scallops with Asparagus Sauce

  1. salt the scallops well and set aside at room temperature while you make the asparagus sauce.

  2. steam the asparagus. use a potato peeler to shave the tough outer layer off the spears, up to 3/4 of the way up the spear.

  3. Chop into 2" pieces and boil in a pot of salted water for 5-8 minutes.

  4. Remove the asparagus from the pot and shock them in an ice bath so they retain their bright green color.

  5. Put them in a food processor or blender with half the chicken stock and purée until smooth.

  6. pour the sauce into a small pot and add butter. Let the butter melt into the sauce over low heat. Do not let the sauce boil or simmer. If the sauce is too thick, add more chicken broth. Salt to taste.

  7. Pat the scallops dry with paper towels. Heat a sauté pan on high and add the oil (canola or grapeseed will also work) and let it heat for 2 minuets. If the oil starts to smoke, move the pan off the heat.

  8. lay the scallops in the pan well separated from each other. do them in batches is necessary.

  9. sear the scallops for 3-4 minutes without moving . Watch for a golden ring to form around the outside edge. check the scallops with tongs. If they come up cleanly, you should see a dark golden sear. if not, put them back down and let them keep searing.

  10. when they are well seared turn them over and sear on high heat for about 1 minute. Turn off the heat and let the residual heat continue to cook the scallops for at least another minute, more if you like well done scallops.

  11. pour a little of the asparagus sauce on a plate and arrange the scallops on top with the more browned side up.

  12. serve immediately.
