Recipe Ingredients for sea scallops alla Caprese

2 pounds tomatoes
1 cup basil leaves
3 red onions
5 tbls olive oil
24 ounces sea scallops
4 tbls lemon juice

Recipe Directions for sea scallops alla Caprese

  1. preheat grill place flat grill plate on rack to preheat also

  2. slice mixed variety of tomatoes in random fashion and lay out on a platter, tear approx 24 basil leaves and strew atop tomatoes

  3. Slice onions one inch thick, season both sides with salt and pepper and place on hot grill plate, cook each side 7 to 10 minutes until charred on first side flip and repeat. transfer to a plate to let cool then separate and scatter over tomatoes. Drizzle the whole mess with 3 tbls X-virgin olive oil.

  4. While the onions cook carve a checkerboard pattern approx. 1/4 inch thick into one side of all 12 giant diver scallops. Season with salt and pepper toss in a bowl gently with remaining oil.

  5. When onions are done and cooling take scallops and place on grill plate design side down for 5-7 minutes unmoved they should be opaque almost all the way through, flip and sear another 30 seconds. Remove and arrange on the salad.

  6. sprinkle with some course sea salt and ground pepper and the juice of one lemon and serve.
