Recipe Ingredients for Sea Bass over Spinach (or any flaky white fish)

24 oz cod fish fillets
1 onion, diced
1/2 cup dry white wine
1/2 cup ripe olives
1/2 tspn red pepper flakes
14 1/2 oz low-sodium diced tomatoes
2 tbsn capers
2 cups baby spinach
2 tbsp olive oil

Recipe Directions for Sea Bass over Spinach (or any flaky white fish)

Cook rice if serving with. In a large skillet, cook fish in oil, about 3 minutes each side. Remove fish to serving platter to keep warm. In the same skillet you cooked the fish in, add oinion & cook a few minutes. Add wine, oives, red pepper flakes, tomatoes & capers. Allow to simmer and reduce a bit. Add spinach (chop it up a bit first) and allow to wilt down. Top fish with this sauce.
