Recipe from Meijer Produce for Kids Ideal Meals. It originally called for 4 whole eggs, but I only used two whole eggs and 3 egg whites to cut down on the cholesterol.

Recipe Ingredients for Scrambled Waffle-wich

3 eggs
2 egg whites
2 tbsp olive oil
1/2 cup cauliflower, raw, chopped
1/2 cup broccoli, raw, chopped
1/2 cup grape tomatoes, diced
34 g Cheese

Recipe Directions for Scrambled Waffle-wich

  1. Crack eggs in mixing bowl, scramble.

  2. Heat oil in skillet on medium-high heat; add cauliflower, broccoli and tomatoes. Cook for 2 minutes

  3. Add eggs. Stir and cook 2-3 minutes or until firm and not clear. Mix in the cheese.

  4. Serve on whole wheat toast, biscuit, in a pita pocket or English muffin (not included in recipe analysis).
