Recipe Ingredients for Scrambled Tofu

10 oz regular firm tofu
2 oz onion, finely diced
1/2 small red pepper, finely diced
1 small carrot, grated
1/8 tsp turmeric
1/2 tsp soy sauce
1 freshly ground black pepper

Recipe Directions for Scrambled Tofu

  1. Drain the tofu and mash it, or crumble by hand.

  2. Sauté the vegetables until soft.

  3. Add the crumbled tofu and sufficient turmeric to give an attractive colour.

  4. Season with soy sauce and pepper to taste. Serve hot
