Recipe Ingredients for Scrambled Tofu

1 tablespoon olive oil
2 cups green onions, chopped
14 1/2 ounces diced tomatoes, peeled, with juice
14 ounces firm silken tofu, drained and mashed
1 ground turmeric to taste
1 salt and pepper to taste

Recipe Directions for Scrambled Tofu

Heat olive oil in a medium skillet over medium heat, and sauté green onions until tender. Stir in tomatoes with juice and mashed tofu. Season with salt, pepper, and turmeric. Reduce heat, and simmer until heated through.
