Recipe Ingredients for Scrambled Tofu with Greens & Raspberry Chipotle Sauce

2 tbsp vegetable oil
1 c onion, chopped
3 garlic cloves, chopped
3 c Swiss chard, chopped
16 oz extra firm tofu
3 tbsp soy sauce
1/3 c raspberry fruit spread
1 serving or 2 tsp canned chipotles in adobo sauce, minced
1 tsp lemon juice

Recipe Directions for Scrambled Tofu with Greens & Raspberry Chipotle Sauce

  1. Heat the oil in a large skillet on medium heat. Saute the onions in the oil for a couple of minutes, until they begin to soften. Add the garlic and cook for another minute. Stir in the greens, cover, and steam until the greens begin to wilt.

  2. While the greens steam, in a bowl, use a form to mash the tofu with the soy sauce. Uncover the skillet, increase the heat to high, and cook off any remaining water. Stir in the mashed tofu and cook for 3 or 4 minutes. With a spatula, turn over the tofu mixture and cook for another 3 or 4 minutes, until the tofu just begins to brown.

  3. While the tofu cooks, make the Raspberry Chipotle Sauce. In a small saucepan, stir together with the fruit spread, chipotles, and 2 tbsp of water. Add more water if the sauce is too think. Add more lemon juice to taste.

  4. Serve the tofu topped with the sauce. Serve with toast or on rice.
