Recipe Ingredients for Scrambled Southwestern Eggs

1 large egg
1 egg white
1/8 cup onion, diced
1/8 cup celery, diced
2 tsps canola oil
1 pinch salt
1/8 tsp pepper
1/8 tsp cumin
1/8 tsp coriander

Recipe Directions for Scrambled Southwestern Eggs

  1. Saute onion and celery in oil until barely soft

  2. Whisk egg, egg white, salt, pepper, cumin & coriander together in small bowl

  3. Add eggs to onion & celery

  4. Scramble until cooked through

  5. Serve immediately
